Mimi's Famous Peach Cobbler

There's nothing quite like a homemade Peach Cobbler to ease your worries and comfort your soul. Think I'm wrong? You haven't tried my Mimi's Peach Cobbler.

This past Easter weekend my Mimi made some of her famous Peach Cobbler and instructed me on the "proper" way to make it. People in her community ask for it ALL the time, and it's been known to cure the blues--so you know it HAS to be delicious!

Three things: a) I didn't like this when I was little--in fact, I refused to try it! I loved peaches, cake, and ice cream--who knows, I had the weirdest taste back then b) I tried to make this all by myself once, and failed miserably (not enough butter) c) This is not healthy, at all, whatsoever. But it's oh so good and oh so worth it!



Here's how to make it: (in the most simplest terms)
 
Pre Step 1: Grease entire pan with a stick of butter. Not PAM. Butter. Just smear it all over. And don't think about the calories.

1. Pour canned peaches into a butter greased pan. See Below.




2. Cover with Duncan Hines Classic Butter Golden (Moist) cake batter. It is highly important that you use this kind. I blame my failed attempt on the fact that I didn't use this EXACT kind. (and not using enough butter) Smooth the cake batter over the peaches until flat.





3. Cover the ENTIRE surface with pats of butter. Literally. It's going to take at least one whole stick. I warned you that it was unhealthy, but don't skimp on this. And don't use the spreads in the tubs. Using the sticks of butter is of the utmost importance. (I would have a picture, but butter doesn't really photograph well.)




4. Preheat the oven to 350 degrees. After covering the peaches and cake mix with pats of butter, put in oven and watch it until it looks like the ABOVE picture. You can set a timer, but I advise just keeping an eye on it. You want it to be golden brown and slightly crispy on the sides. Yum, that crust looks so delicious and it's making me wish I had brought some back with me!




5. Let it cool and then you're ready to plate! Find the prettiest glasses you have, top it with vanilla ice cream and a sprig of mint and ENJOY!




Now that I know the proper way to make it, I'm going to have to give the whole thing another go. Also, this is commonly known as a "dump cake", but it will ALWAYS be Peach Cobbler to me--and we Ellzey's have never done anything the "common" way!

  8. My grandmother made me peach cobbler ALL THE TIME growing up.. It was my favorite! I have yet to try to make some. I need to give this a try.
